Die Jungs der The Kinly Bar in Frankfurt am Main, welche gerade zur Bar des Jahres 2020 gekürt wurde, betreiben in Berlin die AMO Bar.

Diesmal geht es zwar nicht um Gerichte, doch die Details, die Techniken und Zutaten, welche hier verwendet werden, um neuartige, überraschende Drinks zu konzipieren, erinnern oftmals an Speiseküche. Außerdem passend anlässlich des Bar Convent Berlin 2019, die weltweit größte Messe für Spirituosen, welcher Anfang der Woche stattfand.

Denn die Jungs der renommierten und nun auch im Rahmen des „Mixology Bar Awards“ zur Bar des Jahres 2020 gekrönten The Kinly Bar in Frankfurt am Main, sind jetzt auch in der AMO Bar am Werk und bringen ihre Signature-Cocktails jetzt auch in die Hauptstadt

Die Bar liegt im Keller bzw. Underground des seit Anfang des Sommers neu eröffneten Amano-Hotels an der Friedrichstraße Ecke Oranienburger Straße. Über die Sommermonate stand im Innenhof des Hotels vorübergehend eine Bar, doch für den kommenden Winter lädt die im modischen Mix aus Art-Deco und New Yorker-Soho House-Chic gestylte Bar im UG hervorragend dazu ein, Raum und Zeit zu vergessen – dies könnte aber auch an den vorzüglichen Drinks liegen!

Die Jungs sind insbesondere bekannt für aufwendige und moderne Techniken wie Re-Destillation, Sous-Vide Verfahren und Fermentationen. Das Resultat sind z.B. die Interpretation einer „Rum-Cola“ namens Barrio Libre, eine Sous-Vide Infusion mit Jamaikanischem Rum und Aronia Beere, dazu selbst hergestellte Kinly Kola Reduction und Soda, einem trotz Milchfilterung durchsichtigen Erdnussbutter-Rum-Drink (Butterbean), oder auch einem ebenfalls kristallklaren Butterfly Mojito, ein re-destillierter Minz-Rum, mit geklartem Limettensaft, Zuckersirup und Soda. Und natürlich wird für den Kinly G&T – das Tonic hier auch selbst zubereitet.

Andere Drinks wiederum stechen dagegen besonders durch die Konstellation der Zutaten, wie der Flamboyant Red Head Punch, ein Salbei/Estragon Hendrick’s Gin als Sous-Vide Infusion, mit Orangenbrause, Wein vermischtem Limettensaft und Matcha Pulver. Der Drink ist unglaublich vielschichtig und interessant. Die bunte Zusammensetzung von Kräutern und Zutaten verleiht ihm zusätzlich einen an Waldmeister erinnernden Geschmack.

Dass es hier um Technik und Geschmack geht, wird auch in der Präsentation der Drinks deutlich – typische Kristallgläser, clean und simpel dekoriert mit einer eingerollten Gurke, einer Zitronenscheibe oder Orangenschale oder – als höchstem der Gefühle bzw. der Dekoration – mit einem einsamen Blümchen. Konzentration auf das Wesentliche!

Besonders angetan hat es mir der Louis Highball, derzeit auch mein absoluter Lieblingsdrink. Er erquickt. Hierbei handelt es sich um einen Sous-Vide infundierten Kurkuma-Kardamom Whiskey, mit Birnenbrause, Zitronensaft und Ginger Beer. Die pritzelnde Brause, zusammen mit dem stark sprudeligen Ginger Beer machen den Drink fizzy und belebend. Kurkuma unterstreicht hervorragend den Ingwer des Ginger Beers und der Zitronensaft neutralisiert dessen leicht bittere Note. Zitrone sorgt für weiteren erfrischenden Geschmack und Kardamom rundet den Drink noch mit einer feinen, subtilen Würze und Schärfe ab. Rundum stimmig und perfekt.

Donnerstags gibt es derzeit ein After-work Special mit live DJ, Funk & Soul und sogar einem Finger-Food-Special vom JOSEPH, dem im Hoteleingang angesiedelten israelischen Restaurant. Auch in München sind die Drinks der Kinly Boys übrigens seit Dezember 2018 in ihrem Cocktail-Bistro Ménage Bar im hippen Gärtnerviertel zu genießen.

Die Kinly Boys, René Soffner und Johannes Möhring, und Barchef Jonas Stein haben angekündigt, neben Ihren Signature-Drinks weiterhin an vielen neuen Kreationen zu tüfteln. Es wird bei ihnen also immer etwas Neues und Herausforderndes zu entdecken geben. Oder man entscheidet sich einfach erneut für den Louis Highball!

AMO Bar – An Underground Lovestory

The guys of The Kinly Bar, crowned Bar of the Year 2020 during this weeks’ Bar Convent Berlin 2019, are here.

This time it’s not about dishes, but nonetheless about details, techniques and ingredients reminiscent of the kitchen, which are used here to create novel and surprising drinks. Also suitable in light of the Bar Convent Berlin 2019, the world’s largest trade fair for spirits, which took place earlier this week.

The guys of the renowned The Kinly Bar in Frankfurt am Main, now crowned Bar of the Year 2020 at the „Mixology Bar Awards“, are now also at AMO Bar and thereby bring their signature cocktails to Berlin.

The bar is located in the basement aka underground of the Amano Hotel, which has been newly opened beginning of summer, on the corner of Friedrichstraße and Oranienburger Straße. During the summer months a temporary bar was installed in the inner courtyard of the hotel, but for the coming winter the bar in the basement, styled in a fashionable mix of Art-Deco and New Yorker-Soho House-Chic, invites to forget space and time – although this could also be due to the excellent drinks!

The boys are particularly known for elaborate and modern techniques such as re-distillation, sous-vide processes and fermentations. The results are for example an interpretation of a “Rum-Cola” called Barrio Libre, a sous-vide infusion with Jamaican rum and Aronia berry, self-made Kinly Cola reduction and soda, a peanut butter rum drink (Butterbean), which is entirely transparent despite milk-filtration, or also a crystal clear Butterfly Mojito, a re-distilled mint rum, with clear lime juice, sugar syrup and soda. And of course, the tonic for the Kinly G&T is prepared by themselves.

Other drinks, on the other hand, stand out due to their constellation of ingredients such as the Flamboyant Red Head Punch, a sage/estragon Hendrick’s Gin as sous-vide infusion, with orange sherbet, wine mixed lime juice and matcha powder. The drink is incredibly complex and interesting. The refined composition of herbs and ingredients gives it an additional taste reminiscent of woodruff.

The fact that emphasis is put on technology and taste is also evident in the presentation of the drinks – typical crystal glasses, clean and simply decorated with a rolled cucumber, a slice of lemon or orange zest or – as the highest of feelings or decoration – with a delicate lonely flower. Concentrate on the essentials, please!

I was particularly amazed by the Louis Highball, currently my absolute favourite drink. It’s pure refreshment. It is a sous-vide infused turmeric cardamom whiskey, with pear sherbet, lemon juice and ginger beer. The effervescent sherbet, together with the highly bubbly Ginger Beer make the drink fizzy and invigorating. Turmeric is an excellent enhancer of the ginger taste of the ginger beer and lemon juice neutralises its slightly bitter note. Lemon provides further refreshing taste and cardamom rounds off the drink with a fine, subtle spiciness. All in all harmonious and perfect.

On Thursdays there currently is an after-work special with live DJ, Funk & Soul, and a finger-food-special from JOSEPH, the Israeli restaurant located in the hotel entrance. Also in the hip Gärtnerviertel of Munich, the Kinly Boys’s drinks can be enjoyed since December 2018 in their cocktail Bistro Ménage Bar.

The Kinly Boys, René Soffner and Johannes Möhring, and head-barkeeper Jonas Stein have announced that they will continue to work on many new creations in addition to their signature drinks. Thus, there will always be something new and provoking to discover. Otherwise one can always go for the Louis Highball again!
