Im schicken peruanischen Restaurant Lila am Paul-Lincke Ufer von Berlin-Kreuzberg kann wie in Lima verköstigt werden.

Stimmt, kling fast wie Lima. Inspiriert von den Rufnamen seiner Mutter und Großmutter, welche beide ebenfalls leidenschaftliche Köchinnen sind, erinnert er auch an die Heimat von Koch Omar Ben Hammou – Lima, dort liegen die Küstenbezirke Limas bei Sonnenuntergang in einem tief lilafarbenen Licht. Das Logo, ein Octopus, verrät den Einschlag des Restaurants – die neue peruanischen Küche –geprägt von Seafood.

Ceviche ist eines der Nationalgerichte Perus. Omar Ben Hammou nutzt seine internationale Kochausbildung, um hier traditionelle peruanische Gerichte in moderne Geschmackskompositionen zu verwandeln. Oder aber Gerichten der internationalen, oftmals italienischen Küche, den peruanischen Tupfer Kreativität, Raffinesse und Frische zu verleihen– so wie es in den zahlreichen schicken Restaurants in Lima derzeit praktiziert wird.

Ich selbst habe insgesamt etwa 12 Monate in Lima verbracht, auf kulinarischer Mission, tatsächlich. Die peruanische traditionelle Küche lässt sich am besten auf den Märkten Limas erleben, dort sind die Geschmäcker bereits nahezu betäubend intensiv und „zum reinlegen“. Der Visionär Gaston Acurio verpasste den rudimentären peruanischen Gerichten einen neuen Anstrich und gelangten so zu internationaler Anerkennung. Dann kamen die Sterneköche Virgilio Martinez (auch bei Chef’s Table auf Netflix) mit seiner Neugierde, die peruanische Sortenvielfalt der 50 Klimazonen zu erkunden, und Mitsuharu, der Vorreiter der Nikkei-Küche (peruanische Küche mit japanischen Kochtechniken). Das Essen – der neue Stolz des Landes. Die erste Frage eines Peruaners an einen Ausländer ist meist, ob man schon die peruanische Küche probiert habe und welches das Lieblingsgericht sei, gefolgt von einer endlosen Auflistung an Gerichten und Varianten, die man noch zu probieren habe.

Für jeden Essensliebhaber ist Peru DAS wahre Paradies. Lima. Der Melting-Pot Südamerikas für junge, leidenschaftliche Köche, welche von der Diversität der Zutaten, der Nationalitäten und Kochtechniken Gebrauch machen. Es werden keine Mühen gescheut, und so ist der Standard hier wirklich beeindruckend hoch.

So war ich total gespannt und erfreut, dass ein Koch der „neuen“ peruanischen Schule nun in Berlin ein Restaurant eröffnet. Schafft er es, die Geschmäcker Limas nach Berlin zu holen? Oder ist es schlichtweg unmöglich und verliert die Küche mit ihrer Reise über den Ozean einfach unweigerlich an Geschmack?

Um den Spannungsbogen nicht unnötig zu strapazieren – Ja, er schafft es tatsächlich.

Das Restaurant liegt in einem der Hinterhöfe am Paul-Lincke Ufer. Das Interior ist minimalistisch schick. Wird jedoch etwas aufgelockert durch eine mitten durch den Raum verlaufende, geflieste Bar mit offener Showküche. Der Aufbau selbst, der Stil – muy limeña. An der Barra kann auch gegessen und die feine Handwerkskunst beobachtet werden: die unterschiedlichen Zubereitungsstationen von Caliente zu Frio, dann zum hochkonzentrierten und genauen, oftmals vom Chef selbst ausgeführten Plating (Anrichtung). Sehr systematisch und sauber aufeinander abgestimmt bereits im Aufbau der Küchenabläufe.

Das Ceviche ist fantastisch. Die erfrischende Säure der Limette, die belebende Schärfe der in Peru beliebtesten und weitverbreitetsten, leicht fruchtigen, gelben Chili (aji amarillo), die sanfte Würze der aromatischen, hauchdünn geschnittenen roten Zwiebel, der milde, großkörnige Andenmais, die balancierte Süße des Süßkartoffelpürees und der Crunch durch das Canchita (knuspriger, gerösteter Mais). Und nicht zuletzt der gute, frische Fisch machen es zu einem allumfänglichen Geschmackserlebnis.

Aber auch Gerichte wie der halbierte Blumenkohl sind phantastisch. Gedünstet mit kombu (japanische Alge) und knusprig gegrillt, auf einer Emulsion aus aji amarillo, dazu ein Blumenkohlpüree abgeschmeckt mit yuzu kosho (ein japanisches Gewürz aus yuzu, einer japanischen Zitrusfrucht und Chilipfeffer) und Koriander.

Der Flan. Zwar hat Omar seine Frau mit seinem Panna cotta auf sich aufmerksam gemacht, doch hätte sie ihn vielleicht schon direkt an dem Abend geheiratet, wenn es stattdessen der Flan gewesen wäre. Dieser ist einfach herrlich. Fast jedes Land hat seine eigene Zubereitungsart des Flans, mal glibberig, mal wacklig, bis hin zu cremigem Pudding oder fast schon Käsekuchenkonstitenz, so wie in Frankreich. Die crema revoltada von Omar ist locker, leicht gekühlt, etwas wacklig und doch herrlich cremig zugleich. Eine leichte und doch nicht zu dünnflüssige Karamellschicht lasiert das Vanille-Creme-Törtchen. Dazu eine Crème mit Vanille und Zitronenzeste. Die Crème, der Flan, das Karamell, es passt einfach geschmacklich perfekt zusammen. Delicioso!

Eigentlich begeistert mich jedes Gericht auf der Karte. Denn sie sind alle raffiniert, gewitzt, fein und ausbalanciert. So macht es einfach Spaß sich dort durch die Karte zu probieren, denn es ist durchweg begeisternd und lässt den Gast sich kurz wieder wie in Lima fühlen.

Dining like in Lima in the chique Peruvian Restaurant Lila am Paul-Lincke Ufer in Berlin-Kreuzberg.

Yes, it almost sounds like Lima. Inspired by the names of his mother and grandmother, who are also passionate cooks, it also resembles to the home of chef Omar Ben Hammou – Lima, which at sunset, the coastal districts of Lima are in a deep purple light. The logo, an octopus, reveals the focus of the restaurant – the new Peruvian cuisine – characterized by seafood.

Ceviche is one of the national and most famous dishes of Peru. Omar Ben Hammou uses his international cooking education to transform traditional Peruvian dishes into modern food compositions. As well as to other international, often Italian, dishes, Omar adds creativity, refinement and freshness – as currently practiced in the many chic restaurants in Lima.

I myself spent a total of about 12 months in Lima, on a culinary mission, actually. Traditional Peruvian cuisine can best be experienced at the local Lima markets, where the flavors are already almost stunningly intense. The visionary Gaston Acurio gave the rudimentary Peruvian dishes a new touch through which they gained international recognition. Then came star chefs Virgilio Martinez (also in Chef’s Table on Netflix) with his curiosity to explore the Peruvian variety of the 50 climate zones, and Mitsuharu, the pioneer of Nikkei cuisine (Peruvian cuisine with Japanese cooking techniques). Food – the new pride of the country. The first question a Peruvian asks a foreigner is usually whether what he has tried and which is the favorite dish, followed by an endless list of dishes and variations that should still be try.

For every food lover, Peru is THE true paradise. Lima. The melting pot of South America for young, passionate chefs who make use of the diversity of ingredients, nationalities and cooking techniques. No effort is spared, and so the standard here is impressively high.

So I was really excited and delighted that a chef from the “new” Peruvian school is now opening a restaurant in Berlin. Will he manage to bring the tastes of Lima to Berlin? Or is it simply impossible and the kitchen inevitably loses its taste with its journey across the ocean?

In order not to unnecessarily strain the arc of tension – Yes, he manages.

The restaurant is located in one of the courtyards on the Paul-Lincke Ufer. The interior is minimalist chic. However, it is a bit loosened up by a tiled bar with open show kitchen running through the middle of the room. The structure itself, the style – muy limeña. At the Barra you can also eat and observe the fine art: the different preparation stations from Caliente to Frio, then to the highly concentrated and precise plating, often done by the chef himself. Very systematically and neatly coordinated with each other already in the set-up of the kitchen processes.

The Ceviche is fantastic. The refreshing acidity of lime, the invigorating spiciness of Peru’s most popular and widespread, slightly fruity yellow chili (aji amarillo), the gentle spice of the aromatic, wafer-thin cut red onion, the mildness of the large-grained Andean corn, the balanced sweetness of the sweet potato and the crunch by the canchita (crunchy, roasted corn). And last but not least the excellent fresh fish makes it an all-encompassing taste experience.

But dishes like the halved cauliflower are similarly fantastic. Stewed with kombu (Japanese seaweed) and grilled sharply, served on an emulsion of aji amarillo, with a cauliflower puree flavoured with yuzu kosho (a Japanese spice of yuzu, a Japanese citrus fruit and chilli pepper) and coriander.

The flan. Although Omar drew his wife’s attention with his Panna cotta, she might have married him that night if it had been the flan instead. This one is just gorgeous. Almost every country has its own way of making the flans, sometimes glibbery, sometimes wobbly, up to creamy pudding or almost a cheesecake consistency, like in France. The crema revoltada by Omar is loose, slightly chilled, a little bit jelly and yet wonderfully creamy at the same time. A light but not too thin layer of caramel glosses the vanilla cream cake. Served with a cream made with vanilla and lemon zest. The cream, the flan, the caramel, it just harmonizes perfectly in taste. Delicioso!

Actually, I love every dish on the menu. Because they are all refined, clever, refined and balanced. So it’s just fun to try out the menu there, because it’s always inspiring and makes the guest feel like in Lima for a short time.
